Stew a tongue nice and soft, make a sauce from butter, onion and flour, add a little vinegar, wine and beef broth to make a sauce. Take cloves, lots of whole black pepper, all spice. Grind well in mortar, add to sauce. Put tongue into sauce, let it stew well. For serving, cut a heart shaped hole in the middle of the tongue, pour sauce into it. Ready to serve.
