Melt butter, add flower, seethe and stir to a light yellow, add water or gruel, stir well. Clean one head of romaine, seethe it. Add safron to soup and 2 tbsp. cream. Add romaine and seethe well until done.
Anchovy Sauce

Take 3 or 4 anchovys, clean them, remove fish bone, cut fish to small pieces. Give butter in a pot, melt it and add anchovys. Simmer, add 2 or 3 tbsp. flour, stew.
Add a little beef broth, cream and a little safron. Salt, seethe up a few times, serve in saucer.
